  • 6 boneless, skinless chicken thighs (1 lb.), trimmed and cut into ½-inch-thick strips
  • Kosher salt and freshly ground black pepper
  • 3 Tbs. extra-virgin olive oil
  • ¾ tsp. ground cumin
  • 1 medium lemon
  • 1 large red onion, thinly sliced
  • ¼ cup chopped fresh flat-leaf parsley
