Ingredients

  • 4 garlic cloves
  • 2 tablespoons tomato paste
  • 1 teaspoon salt
  • 1 ¾ cups reduced-sodium chicken broth
  • ½ cup smooth peanut butter
  • rice
  • 1 medium onion
  • + 8 more ingredients
    • ¼ cup peanut or palm oil
    • 1 10-oz box frozen small okra
    • 1 pound sweet potato
    • 1 ¼ teaspoons cayenne
    • 1 3- to 3 1/2-lb chicken
    • ¼ cup water
    • 1 teaspoon salt
    • 1 14- to 15-oz can whole tomatoes in juice

Arrange chicken in 1 layer on a tray, then sprinkle with salt and let stand at room temperature 30 minutes.
