Chicken Stuffed with Sundried Tomatoes

Ingredients

  • salt and pepper to taste
  • 1 teaspoon fresh thyme
  • 2 tablespoon cornstarch
  • ¼ cup flour
  • 3 tablespoon extra virgin olive oil
  • 1 bay leaf
  • 1 cup dry white wine

    • 1 cup chicken broth
    • 4 ounce fresh mozzarella
    • 2 ounce goat cheese
    • 4 boneless skinless chicken breasts
    • 4 tablespoon sun dried tomato paste

In a small bowl combine 3 tablespoons tomato paste , thyme and goat cheese. Cut a pocket into each chicken breast stuff each breast with goat cheese mixture and 1 ounce each of fresh mozzarella.
