Chicken Tagine With Apricots and Honey

Ingredients

  • 2 tablespoonshoney
  • 1 (14 ½ ounce) canchickpeas
  • 3 tablespoonsdried currants
  • 1 granny smith apple, peeled, cored and cut into ¾ inch cubes
  • 1 tablespoonwhite wine vinegar
  • ½ cupdried apricot, cut into thin slivers (the original calls for Turkish but I have also used California apricots with good results)
  • 1 mediumturnip, cubed into 1 inch pieces
  • + 11 more ingredients
    • 3 cupsbutternut squash, cubed into 1 inch pieces
    • 1 tablespoonolive oil
    • 1 (14 ounce) can99%fat-free chicken broth
    • 1 lbboneless skinless chicken breast, pounded thin and cut into 1 inch strips
    • ½ teaspooncinnamon
    • ½ teaspoonsalt
    • ¾ teaspooncumin
    • 1 teaspoonground coriander
    • 2 teaspoonspaprika
    • ¼ cupall-purpose flour
    • 1 cupuncookedcouscous

1 Prepare couscous as directed on package.
