Chicken Tagine with Chickpeas and Dried Fruit

Ingredients

  • Salt and pepper to taste
  • 2 tablespoon vegetable oil
  • ½ cup pine nuts
  • 1 of instant plain couscous, prepared to box directions
  • 2 teaspoon cumin
  • ½ teaspoon cinnamon
  • 1 tablespoon fresh grated ginger
  • + 10 more ingredients
    • Juice of 1 lemon, plus ½ teaspoon grated peel
    • 8 ounce Tomato Paste
    • 2 of chicken broth
    • 1 of chickpeas, undrained
    • 3 of garlic, chopped
    • ½ cup dried apricots
    • ½ cup raisins
    • 3 pound chicken thighs, boneless, cut into chunks
    • 2 carrots, chopped
    • 2 onions, halved and sliced into moons

Saute carrots, chicken and onion in oil until vegetables are soft and chicken is cooked through.
