Chicken Tagine with Olives and Preserved Lemons

Ingredients

  • 2 tbsp vegetable oil
  • 2 chickens , (3 lb/1.5 kg each), cut into pieces, or 3 lb (1.5 kg) chicken drumsticks and thighs
  • 1 spanish onion , thinly sliced
  • 3 cloves garlic
  • 1 tomato , peeled, seeded and chopped
  • 2/3 cup chopped fresh coriander
  • 1 tsp ground ginger
  • + 7 more ingredients
    • 1 tsp paprika
    • ½ tsp saffron
    • ¼ tsp ground cumin
    • ¼ tsp pepper
    • 1 cinnamon stick , broken
    • ¾ cup green olives , and/or black olives
    • 2 Preserved Lemons Recipe , rinsed and chopped
