Chicken Ta'Jene

Ingredients

  • 1 broiler-fryer chicken
  • 1 lemon, cut in slices
  • 4 T olive oil, divided
  • 1-¾ c water, divided
  • 1 t garlic salt
  • 1 t paprika
  • ¼ t tumeric
  • + 8 more ingredients
    • 2 medium onions, chopped
    • 1 T cilantro
    • 1 clove garlic clove, chopped
    • 1 lb baby carrots
    • 3 tomatoes, peeled, quartered
    • 1 t salt
    • 6 medium potatoes, halved
    • 1 (7 oz.) jar green olives, drained and rinsed

Rub chicken with juice of two of the lemon slices and squeeze juice over chicken. Brush chicken evenly with 1 tablespoon of the olive oil. In Dutch oven, place remaining 3 tablespoons oil and 1/4 cup of the water; heat to medium temperature. Sprinkle chicken with garlic salt, paprika and tumeric....
