Ingredients

  • ¼ cup chopped fresh basil
  • 8 (3-ounce) skinless, boneless chicken thighs
  • ¾ cup chopped onion
  • 1 ½ teaspoons olive oil
  • 1 (14.5-ounce) can diced tomatoes with basil, garlic, and oregano, un-drained
  • 1/8 teaspoon salt
  • 1/3 cup merlot or other dry red wine
  • + 4 more ingredients
    • ¼ teaspoon freshly ground black pepper
    • 3 garlic cloves, minced
    • 1/3 cup pitted kalamata olives, chopped
    • ¼ teaspoon freshly ground black pepper

Sprinkle chicken evenly with 1/8 teaspoon salt and 1/4 teaspoon pepper. Heat oil in large nonstick skillet over medium-high heat. Add chicken; cook 3 to 4 minutes on each side or until browned.
