Chicken with Sherry Vinegar Sauce

Ingredients

  • ½ teaspoon salt
  • 4 (4-ounce) skinless, boneless chicken breast halves
  • 3 tablespoons sherry vinegar
  • ½ cup minced shallots
  • 1 teaspoon olive oil
  • 1 teaspoon butter
  • 2 tablespoons whipping cream
  • + 3 more ingredients
    • ¼ teaspoon black pepper
    • 1 tablespoon chopped fresh parsley
    • ¾ cup fat-free, less-sodium chicken broth

Sprinkle chicken with salt and pepper. Heat the butter and oil in a large nonstick skillet over medium-high heat. Add chicken; cook 4 minutes on each side. Remove from pan; keep warm.
