Chicken with Tomato Tarragon Sauce


  • 2 lb boneless skinless chicken breasts
  • Salt and pepper to taste
  • ½ lb mushrooms, sliced
  • 1/3 c finely chopped green onions (scallions)
  • ½ c dry white wine or chicken broth
  • 1 (28-ounce) can tomato sauce
  • ½ t dried tarragon
  • + 2 more ingredients
    • ½ t dried thyme
    • 1/3 c feta cheese, optional
