  • ¼ cup PLUS 1 Tbsp. chopped fresh cilantro
  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breast halves, cut into thin strips
  • 2 cups water
  • ½ cup fat free sour cream
  • 2 medium zucchini and/or yellow squash, chopped (about 4 cups)
  • 1 tablespoon finely chopped garlic
