Citrus Chicken Tagine
Ingredients
- 4 garlic cloves, minced
- ¼ teaspoon saffron threads, crushed
- ½ teaspoon ground cinnamon
- 2 cups chopped onion
- 2 pounds skinless, boneless chicken thighs, coarsely chopped
- 1 tablespoon olive oil
- Flat-leaf parsley sprigs (optional)

- 1 cup chopped red bell pepper
- 1 cup fat-free, less-sodium chicken broth
- 5 cups hot cooked couscous
- 3 tablespoons chopped lemon sections (about 1 lemon)
- ¼ cup sliced pitted kalamata olives
- 1/3 cup chopped fresh cilantro
- 1/3 cup chopped fresh parsley
- 1 ½ cups chopped orange sections (about 2 oranges)
- ¼ teaspoon black pepper
- ¾ teaspoon salt
- 1 cup orange juice
Heat the oil in a Dutch oven over medium heat. Add chicken and next 6 ingredients (chicken through garlic), and cook for 12 minutes. Stir in the broth, juice, salt, and black pepper.
