Citrus Chicken Tagine

Ingredients

  • 1 cup chopped red bell pepper
  • ½ teaspoon ground ginger
  • Flat-leaf parsley sprigs (optional)
  • 1/3 cup chopped fresh cilantro
  • 1 cup orange juice
  • ¾ teaspoon salt
  • 1 cup fat-free, less-sodium chicken broth
  • + 12 more ingredients
    • 1 tablespoon olive oil
    • 2 pounds skinless, boneless chicken thighs, coarsely chopped
    • 2 cups chopped onion
    • ½ teaspoon ground cinnamon
    • 1/3 cup chopped fresh parsley
    • ¼ teaspoon black pepper
    • 5 cups hot cooked couscous
    • 1 ½ cups chopped orange sections (about 2 oranges)
    • 3 tablespoons chopped lemon sections (about 1 lemon)
    • 4 garlic cloves, minced
    • ¼ cup sliced pitted kalamata olives
    • ¼ teaspoon saffron threads, crushed
