Ingredients

  • 4 pounds bison (often labeled buffalo) short ribs
  • 2 tablespoons fresh rosemary
  • 2 tablespoons Dijon mustard
  • 6 garlic cloves
  • 3 cups strong coffee
  • 7 teaspoons Worcestershire sauce
  • 11 teaspoons dark brown sugar
  • + 13 more ingredients
    • 1 cup low-salt chicken broth
    • 2 cups ice cubes
    • ¼ cup chili sauce (such as Heinz) or ketchup
    • 4 cups water
    • 1 small jalapeño chile
    • 1 tablespoon soy sauce
    • ¼ cup bacon
    • 2 cups onions
    • ¼ cup pure maple syrup
    • ½ cup coarse kosher salt
    • 2 tablespoons apple cider vinegar
    • 1 cup strong coffee
    • ½ cup shallots

Stir 4 cups water, coffee, 1/2 cup coarse salt, and sugar in large bowl until salt and sugar dissolve. Add syrup and next 3 ingredients; stir until ice melts. Add ribs.
