Cold Sweet Potato Soup


  • 1 tablespoon(s) canola oil
  • ½ teaspoon(s) thyme leaves
  • 12 tablespoon(s) feta or blue cheese crumbles as garnish
  • 1 cup(s) celery stalks, chopped
  • ½ teaspoon(s) ground cumin
  • salt and pepper to taste
  • 4 pound(s) 4 large sweet potatoes, unpeeled and quartered

    • 3 cup(s) carrots, peeled and chopped
    • 5 cup(s) chicken broth
    • 1 pinch(s) freshly ground nutmeg, a few grinds
