Cream of Cauliflower Soup II

Ingredients

  • 2 tablespoons butter
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 2 large potatoes, peeled and cubed
  • 2 carrots, chopped
  • 2 (14.5 ounce) cans chicken broth
  • 1 head cauliflower, chopped
  • + 6 more ingredients
    • 1 cup milk
    • 1 teaspoon salt
    • ½ teaspoon ground black pepper
    • 1/8 teaspoon ground nutmeg
    • 1 tablespoon dry sherry
    • 1 tablespoon chopped fresh parsley

1. In a large pot over medium heat, melt butter. Stir in onion and garlic and cook until onion is translucent, about 5 minutes. Stir in potatoes and carrots and cook 5 minutes more.
