Creamy Corn Soup with Crispy Prosciutto

Ingredients

  • 2 cups milk
  • 2 tablespoons unsalted butter
  • 1 cup chopped onion (1 large)
  • ½ teaspoon salt
  • ½ cup thinly sliced carrot (1 medium)
  • ½ cup thinly sliced celery (1 stalk)
  • 2 clovesgarlic, minced
  • + 4 more ingredients
    • 2 cups reduced-sodium chicken broth
    • 2 sprigs fresh thyme
    • 2 bay leaves
    • 2 thin slices prosciutto, cut into ½-inch-wide strips

1. In a large saucepan combine milk and the corn cob halves. Bring just to boiling; remove from heat. Cover and set aside.
