Creamy Ginger-Parsnip Soup

Ingredients

  • 1 chopped onion
  • 1 (2-inch) piece peeled fresh ginger
  • 1 quart chicken broth
  • 1 cup heavy cream
  • ½ teaspoon kosher salt
  • ¼ cup minced chives
  • 2 pounds parsnips
  • + 2 more ingredients
    • 1 sweet potato
    • 1 cup chopped toasted walnuts

1. Peel 2 lb. parsnips and 1 sweet potato and cut into 1-inch pieces. Bring parsnips, sweet potato, 1 chopped onion, 1 (2-inch) piece peeled fresh ginger and 1 quart chicken broth to a boil.
