Ingredients

  • 2 tablespoons extra-virgin olive oil
  • 3 3/4-ounce wedges Laughing Cow cheese
  • 1 cup lager beer
  • 1 cup arborio rice

  • 3 cups low-sodium chicken broth
  • 2 medium shallots
