Creole Chicken and Grits

Ingredients

  • ¾ cup Grits
  • ½ teaspoon salt
  • 3 tablespoon Butter
  • ½ C Grated cheddar cheese
  • 1 cup half and half
  • 5 ½ cup Water
  • 5 ½ cup Chicken stock or broth

    • ½ teaspoon Black pepper
    • 1 teaspoon Salt
    • 1 ¼ teaspoon Cayenne pepper
    • ½ teaspoon Basil leaves
    • ½ cup Chicken stock or broth
    • ½ cup White wine
    • 3 tablespoon Flour
    • 2 Tomatoes diced
    • ½ cup Andoule sausage (or any smoked sausage) sliced
    • 1 garlic chopped
    • 1 Shallot diced
    • 1 tablespoon Corn oil
    • 1 2 pound boneless chicken breasts cubed

In a large saucepan bring water, chicken stock, salt and butter to a boil. Reduce heat to low and add grits stir, cover and let simmer for 15 minutes.
