Curried Vegetable Lo Mein
Ingredients
- 4 cups hot cooked lo mein noodles or linguine (about 8 ounces uncooked)
- 1 ½ cups red bell pepper, cut into 1/4-inch strips
- ½ cup sliced scallions
- 1 tablespoon canola oil
- 1 cup sliced button or shiitake mushrooms
- 2 tablespoons low-sodium soy sauce
- ¾ cup low-sodium chicken broth
