Dijon-Potato Salad with Smoked Chicken Sausage

  • 1 tablespoon fresh lemon juice
  • 1 (12-ounce) package smoked chicken sausage, quartered lengthwise and sliced (such as Gerhard's)
  • ¼ teaspoon salt
  • 6 cups diced red potato (about 2 pounds)
  • ½ cup finely chopped celery
  • ½ cup finely chopped red onion
  • 1/3 cup Dijon mustard
  • + 1 more ingredients
    • ¼ teaspoon black pepper

Steam potato, covered, 10 minutes or until tender. Place a medium nonstick skillet over medium-high heat until hot. Add sausage; sauté 2 minutes. Combine potato and sausage in a large bowl. Add celery and remaining ingredients; toss well to coat.
