Dinner Plate Sourdough and Peruvian Chicken Crostini


  • Herb and Red Lettuce Salad
  • Sourdough Crostini
  • 1 c broken walnuts
  • 1/3 c grated cotija cheese (or parmesan)
  • 1/3 c cream
  • 1 t ground cumin
  • 2 t Aji Amarillo (Rocoto) Peruvian yellow pepper sauce/paste
  • + 7 more ingredients
    • ½ c chopped sweet green pepper
    • ½ c chopped sweet red pepper
    • 1 t salt
    • 1 clove garlic, crushed
    • 1 c diced onion
    • 1 ½ lb diced boneless white and dark chicken
    • 2 T olive oil

Heat oil in large skillet to medium-high heat. Add chicken, onion, garlic, salt, and red and green pepper. Cook, stirring, until chicken is done and peppers are tender crisp, about 6-8 minutes.
