Dinner Plate Sourdough and Peruvian Chicken Crostini
Ingredients
- Herb and Red Lettuce Salad
- Sourdough Crostini
- 1 c broken walnuts
- 1/3 c grated cotija cheese (or parmesan)
- 1/3 c cream
- 1 t ground cumin
- 2 t Aji Amarillo (Rocoto) Peruvian yellow pepper sauce/paste

- ½ c chopped sweet green pepper
- ½ c chopped sweet red pepper
- 1 t salt
- 1 clove garlic, crushed
- 1 c diced onion
- 1 ½ lb diced boneless white and dark chicken
- 2 T olive oil
Heat oil in large skillet to medium-high heat. Add chicken, onion, garlic, salt, and red and green pepper. Cook, stirring, until chicken is done and peppers are tender crisp, about 6-8 minutes. Reduce heat to low, add rocoto, cumin, cream, and cheese, and stir until bubbly. Stir in walnuts. Serve...
