Easy Elegant Chicken Thighs in Wine Sauce

Ingredients

  • 3 cup(s) dry red wine (one 750 ml bottle)
  • 2 sprigs fresh oregano, or 2 teaspoons dried
  • salt and pepper
  • 3 tablespoon(s) tomato paste
  • 1 tablespoon(s) oil
  • 6 clove(s) garlic, or to taste
  • 4 bone-in, skin-on chicken thighs (if thighs are quite small, use 2 per serving)

In a large skillet, heat oil. Generously salt and pepper chicken pieces and add to skillet, skin side down. Cook until well browned, about 10 minutes. While chicken browns, slice or chop garlic.
