Easy Spicy Black Bean Soup


  • Chopped red onion
  • Sour cream
  • Cheddar cheese
  • Salt and pepper
  • 2 cans black beans, drained and rinsed
  • 6 cups low sodium chicken stock
  • 1 teaspoon cayenne pepper
  • + 6 more ingredients
    • 1 tablespoon cumin
    • 1 cup chopped red bell pepper
    • 1 cup chopped green bell pepper
    • 2 cloves garlic, finely chopped
    • 1 ½ cups chopped onion
    • 2 tablespoons olive oil

1. In a large heavy pot, heat oil over medium heat. Add onion, garlic and peppers and cook until tender about 5-8 minutes. Stir in spices and toss to coat vegetables.
