Eggplant Scallopini
Ingredients
- 2 teaspoon(s) dried basil or 2 tablespoons of fresh chopped basil
- 1 cup(s) chicken or vegetable stock
- 4 medium sized tomatoes, chopped - peeling is optional
- black pepper to taste
- 8 clove(s) medium sized garlic, minced
- 2 bell peppers, any color, diced
- 3 tablespoon(s) olive oil

- 6 cup(s) diced eggplant
- 1 pound(s) mushrooms
- 2 teaspoon(s) salt
- fresh grated parmesan cheese to garnish
