End of Summer Chicken and Vegetable Soup

Ingredients

  • 2 tablespoons butter
  • 2 carrots, finely chopped
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon chopped fresh herbs (I used sage and thyme)
  • 2 tomatoes, chopped
  • 4 cups chicken broth
  • + 3 more ingredients
    • 3 cups cooked chicken
    • 2 ears corn, cut off the cob
    • salt and pepper to taste

Melt butter in a large pot set over medium heat. Add onion, carrots and ½ teaspoon salt. Saute until onions and carrots are soft, about 8 minutes.
