Fettuccine with Chicken, Goat Cheese & Spinach

  • Pinch crushed red chile flakes
  • 2 Tbs. olive oil
  • 2 skinless, boneless chicken breast halves (about 1 lb. total)
  • 2 Tbs. chopped fresh basil
  • ½ lb. dried fettuccine
  • 1 cup dry white wine (like Sauvignon Blanc)
  • 5 oz. goat cheese, at room temperature, cut up or crumbled
  • + 3 more ingredients
    • 2 Tbs. minced shallots (from about 2 small)
    • 4 oz. fresh baby spinach (about 6 cups)
    • Kosher salt and freshly ground black pepper

In a medium saucepan, combine the white wine and shallots. Over high heat, reduce the liquid by half, about 5 minutes.
