  • 1 ½ cups light mayonnaise
  • Salt and pepper
  • ½ cup sour cream
  • 2 tablespoons fresh lime juice
  • 2 tablespoons sweet pickle relish
  • 1 11-oz. can mandarin oranges, drained
  • 2 celery ribs, chopped
  • + 5 more ingredients
    • 1 13.5-oz. can unsweetened coconut milk
    • ½ cup dry-roasted peanuts, chopped
    • 1 10-oz. can crushed pineapple, drained
    • ½ cup packed shredded coconut, toasted
    • 4 boneless, skinless chicken breast halves (about 6 oz. each)

Place chicken in a skillet and season with salt and pepper. Pour in coconut milk and bring to a boil over high heat. (Add water, if necessary, to cover chicken.)
