Ginger Chicken with Cucumber-Spinach Salad

  • 7 chicken breast halves, pounded to 1/4 inch thick
  • 1 small cucumber, seeded and thinly sliced (about 2/3 cup)
  • 1 3-inch piece fresh ginger, peeled and thinly sliced
  • 2 teaspoons lemon juice
  • ¼ teaspoon freshly ground black pepper
  • 1 lime, halved
  • 2 scallions, trimmed and thinly sliced
  • + 5 more ingredients
    • ½ small red onion, thinly sliced
    • 3 cups baby spinach
    • 1 red chili pepper, seeded and thinly sliced
    • ¼ cup olive oil
    • 1 ½ teaspoons kosher salt

In a large bowl, combine the chicken, scallions, half the ginger, the juice from the lime, half the oil, 1 teaspoon of the salt, and half the ground pepper.
