  • 4 tablespoons unsalted butter
  • 2 teaspoons sugar
  • 2 scallions
  • 3 pounds turnips
  • 2 tablespoons fresh flat-leaf parsley
  • ¼ teaspoon salt
  • 2½ cups low-sodium chicken broth

Melt butter in a wide 5-quart heavy pot over moderate heat, then add turnips, stirring until well coated.
