Ingredients

  • 1 large stalk celery
  • ½ small onion
  • 1 cup dried red lentils
  • 2 cups low-sodium vegetable stock
  • 1 tablespoon unsalted butter
  • freshly ground black pepper
  • Kosher salt
  • + 1 more ingredients
    • 1 large pinch saffron threads

1. In a medium pot over medium heat, combine the stock, lentils, onion, celery, saffron, salt, and pepper.
