Ingredients

  • ¾ teaspoon coarse-ground pepper
  • 1 onion (1/2 lb.), peeled and diced
  • ¾ cup diced celery
  • 2 quarts fat-skimmed chicken broth
  • Salt
  • 2 teaspoons Worcestershire
  • 1 carrot (1/4 lb.), peeled and diced
  • + 7 more ingredients
    • 2 cloves garlic, minced
    • 2 tablespoons dried oregano
    • 1 tablespoon minced fresh jalapeño chili
    • 6 cups drained canned or cooked Great Northern or other small white beans
    • 1 ½ cups beer (12 oz.)
    • ¼ cup chopped fresh cilantro
    • ½ pound bacon, diced

1. In a 5- to 6-quart pan over medium-high heat, frequently stir bacon until almost crisp, 10 to 12 minutes. Discard all but about 2 tablespoons fat. Add onion, celery, carrot, and garlic. 2.
