Italian Chicken and Penne


  • 1 green pepper (small)
  • ½ cup(s) chopped onions
  • 1 clove(s) garlic, minced
  • 1 tablespoon(s) olive oil
  • 1 pound(s) boneless skinless chicken breast, cut into ½ inch pieces
  • 8 ounce(s) uncooked penne pasta
  • 1 cup(s) sliced fresh mushrooms
  • + 4 more ingredients
    • 1 cup(s) halved cherry or grape tomatoes
    • 1 can(s) pizza sauce (8 ounces can)
    • ½ teaspoon(s) Italian seasoning
    • 1/3 cup(s) shredded part-skim mozzarella cheese

Cook pasta according to the package directions; drain. In a nonstick wok, stir-fry the chicken, pepper, onion and garlic in oil until chicken is no longer pink. Add pasta, mushrooms, tomatoes, sauce and seasoning; heat through. Remove from heat. Sprinkle with cheese; let stand until melted.
