Italian chicken cutlets with basil tomato pasta


  • Lge pasta pot with salted water
  • salt and pepper to taste
  • ½ c good olive oil
  • 6 scallions chopped
  • 3 garlic cloves crushed
  • 6 large basil leaves chopped
  • 4 roma tomatoes quartered

    • 1 lb vermicelli
    • 4 T water
    • ¼ c choped fresh Italian parsley
    • 1 T Italian seasoning blend
    • 2 c grated pecorino romano cheese
    • ¼ c all purpose flour
    • 3 c seasoned breadcrumbs
    • 3 eggs beaten
    • 4 boneless skinless chicken breasts
