  • 8 leeks, white and pale-green parts only
  • 2 tablespoons olive oil
  • 1 shallot, thinly sliced
  • ¼ pound thick-cut bacon, sliced crosswise ¼ " thick
  • 2 garlic cloves, thinly sliced
  • Kosher salt, freshly ground pepper
  • ¼ cup dry white wine
