Lemon, Almond, and Olive Relish

  • 1 lemon, unpeeled
  • ¼ teaspoon kosher salt
  • 1/8 teaspoon black pepper
  • 3 tablespoons extra-virgin olive oil
  • 1 ½ cups green olives, pitted and sliced
  • 1/3 cup chopped almonds

Thinly slice the lemon and remove the seeds. Finely chop the slices. In a bowl, combine the lemon, almonds, olive oil, salt, pepper, and olives. Serve with chicken or pork.
