Lemon Chicken Salad with Tarragon

Ingredients

  • 5 cups shredded cooked chicken (from a 3lb bird)
  • 5 tablespoons mayonnaise
  • ¼ teaspoon freshly ground black pepper
  • 2 tablespoons minced shallot
  • 5 cups shredded cooked chicken (from a 3lb bird)
  • bunch of tarragon leaves
  • 1/3 cup chopped celery
  • + 9 more ingredients
    • 1/3 cup chopped celery
    • grated zest of and juice of lemon
    • 5 tablespoons mayonnaise
    • 1 ½ teaspoons Dijon mustard
    • ¼ teaspoon freshly ground black pepper
    • bunch of tarragon leaves
    • 1 ½ teaspoons Dijon mustard
    • 2 tablespoons minced shallot
    • grated zest of and juice of lemon

In large bowl, whisk together mayonnaise, shallot, Dijon mustard, zest and juice of the lemon, and ground pepper. Stir in chicken and celery. Season to taste with salt and pepper. Sprinkle with fresh tarragon leaves.
