Linguine with Snow Peas, Cucumber, and Peanut Sauce

Ingredients

  • 2/3 cup canned low-sodium chicken broth or homemade stock
  • 2/3 cup canned low-sodium chicken broth or homemade stock
  • 1 ½ cups bean sprouts (about 1/4 pound)
  • ½ teaspoon red-pepper flakes
  • 2 tablespoons soy sauce
  • 1/3 cup peanut butter
  • ¾ pound linguine
  • + 16 more ingredients
    • 2 scallions including green tops, chopped
    • 2 tablespoons soy sauce
    • ¾ teaspoon salt
    • ½ pound snow peas, cut diagonally into thin slices
    • ½ cup chopped peanuts
    • ¾ teaspoon salt
    • 2 cloves garlic
    • ½ cup chopped peanuts
    • 1 cucumber, peeled, halved lengthwise, seeded, and sliced thin
    • 1 ½ tablespoons lime juice
    • ½ teaspoon red-pepper flakes
    • ½ pound snow peas, cut diagonally into thin slices
    • 1 ½ tablespoons lime juice
    • 2 scallions including green tops, chopped
    • ¾ pound linguine
    • 1/3 cup peanut butter

1. In a blender or food processor, combine the garlic, soy sauce, peanut butter, chicken broth, lime juice, red-pepper flakes, and 1/2 teaspoon of the salt. Puree until smooth. 2.
