Mandarin meat fruit recipe (Chicken liver parfait)

Ingredients

  • 150 grams (approx. 5 fl oz) dry Madeira
  • 300 grams (approx. 10.5 oz) unsalted butter, melted
  • 240 grams eggs (about 4 or 5 eggs, depending on size)
  • 400 grams (approx. 14 oz) chicken livers (trimmed weight)
  • 18 grams (approx. 0.6 oz) table salt
  • 50 grams (approx. 1.7 fl oz) brandy
  • 75 grams (approx. 2.5 fl oz) white port
  • + 4 more ingredients
    • 150 grams (approx. 5 fl oz) ruby port
    • 15 grams (approx. 0.5 oz) sprigs of thyme, tied with string
    • 3 grams (approx. 0.1 oz) minced garlic
    • 100 grams finely (approx. 3.5 oz) sliced shallots

1. Place the shallots, garlic and thyme in a saucepan with the Madeira, ruby port, white port and brandy. Set aside to marinate for 24 hours. 2.
