Mango Chutney Chicken Salad Tea Sandwich


  • ½ rotisserie chicken, meat picked and finely cubed (about 2 cups)
  • Butter
  • 1 loaf(s) white bread, or up to 2 loaves, as needed
  • Pepper, to taste
  • Salt, to taste
  • Fresh lemon juice, to taste
  • 2 scallions, finely chopped
  • + 3 more ingredients
    • 3 stalk(s) celery, finely chopped (about 1/3 cup)
    • 1/3 cup(s) mango chutney, big pieces chopped
    • ½ cup(s) Greek-style yogurt

1. In a bowl, stir together the chicken, yogurt, chutney, celery, scallions, a squeeze lemon juice, salt, and pepper. Taste and adjust seasonings, if necessary.
