Mango Coconut Chicken
Ingredients
- 1 T chopped fresh cilantro
- ½ c coconut milk
- 1 large ripe, slightly soft mango, peeled, pitted and chopped
- 4 boneless, skinless chicken breasts
- 3 T olive oil
- 1 t kosher salt
- ½ t crushed red pepper flakes
- + 3 more ingredients

- 1 T finely chopped fresh ginger
- 2 garlic cloves, finely chopped
