Marinated Chicken And Chickpea Salad

Ingredients

  • ¼ cup fresh lemon juice (about 3 lemons)
  • 2 tablespoons julienne-cut radish
  • 1 tablespoon chopped fresh mint
  • ¼ teaspoon freshly ground black pepper
  • ¼ teaspoon salt
  • 2 tablespoons chopped freshparsley
  • 1 tablespoon olive oil
  • + 4 more ingredients
    • 3 cups arugula or spinach leaves
    • 1 small garlic clove, minced
    • 2 cups chopped cooked chicken
    • 1 (15.5-ounce) can chickpeas (garbanzo beans), drained and rinsed

Combine first 10 ingredients; toss well. Cover and chill at least 1 hour. Serve over arugula.
