Marinated Salsa Chicken

Ingredients

  • Lime slices or wedges, optional garnish
  • Cilantro sprigs, optional garnish
  • 3 cup cooked rice (preferably cooked in chicken broth)
  • 1 cup half and half
  • 1 cup salsa
  • 1 cup chicken broth or stock
  • 2 tablespoon flour
  • + 13 more ingredients
    • 1 onion, chopped
    • 2 tablespoon olive oil
    • Sauce:
    • 8 ounce carton plain yogurt
    • ½ cup fresh cilantro leaves, chopped, divided use
    • 6 green onions, chopped, divided use
    • 5 to 6 garlic, minced, divided use
    • 1 ½ teaspoon grated fresh ginger root
    • 2 tablespoon fresh lime juice
    • 2 tablespoon ground coriander
    • 2 tablespoon ground cumin
    • Marinade:
    • 1 ½ pound boneless, skinless chicken breasts or thighs (or a combination of both), cut in 1 to 1 1/2 inch pieces

Place the chicken in a zip-lock bag and set aside. Whisk cumin and coriander together in a small bowl and set aside.
