Marinated Salsa Chicken
Ingredients
- Lime slices or wedges, optional garnish
- Cilantro sprigs, optional garnish
- 3 cup cooked rice (preferably cooked in chicken broth)
- 1 cup half and half
- 1 cup salsa
- 1 cup chicken broth or stock
- 2 tablespoon flour

- 1 onion, chopped
- 2 tablespoon olive oil
- Sauce:
- 8 ounce carton plain yogurt
- ½ cup fresh cilantro leaves, chopped, divided use
- 6 green onions, chopped, divided use
- 5 to 6 garlic, minced, divided use
- 1 ½ teaspoon grated fresh ginger root
- 2 tablespoon fresh lime juice
- 2 tablespoon ground coriander
- 2 tablespoon ground cumin
- Marinade:
- 1 ½ pound boneless, skinless chicken breasts or thighs (or a combination of both), cut in 1 to 1 1/2 inch pieces
Place the chicken in a zip-lock bag and set aside. Whisk cumin and coriander together in a small bowl and set aside.
