Mashed Yukon Gold Potatoes with Horseradish Butter

Ingredients

  • 1 tablespoon chopped fresh parsley
  • ¼ cup butter, softened
  • ¼ cup fat-free, less-sodium chicken broth
  • 6 ½ cups cubed peeled Yukon gold potatoes (about 2 1/2 pounds)
  • 2 teaspoons prepared horseradish
  • Horseradish butter:
  • Potatoes:

    • 1 bay leaf
    • 1 teaspoon salt
    • 1 tablespoon minced shallots
    • ¼ cup 1% low-fat milk
    • Cooking spray
    • ¼ cup reduced-fat sour cream
    • ¼ teaspoon freshly ground black pepper
