Ingredients

  • 2 tablespoons minced fresh onion
  • 1 ½ cups unsalted matzo meal
  • 1 garlic clove, minced
  • 2 large egg yolks
  • ½ teaspoon salt, divided
  • 4 chicken drumsticks, skinned (about 1 1/3 pounds)
  • 1 ½ cups chopped celery

    • 1 ½ cups chopped carrot
    • 8 parsley sprigs
    • 4 cups water
    • Cooking spray
    • 3 tablespoons vegetable oil
    • 4 cups chopped onion
    • 7 cups fat-free, less-sodium chicken broth, divided
    • 10 garlic cloves, crushed
    • 4 chicken thighs, skinned (about 1 1/3 pounds)
    • 2 tablespoons chopped fresh dill
    • 8 thyme sprigs

Combine 1 3/4 cups chicken broth, matzo meal, 2 tablespoons minced onion, oil, 1/4 teaspoon salt, yolks, and 1 minced garlic clove, stirring well. Cover and chill 1 hour.
