Meatball Stew

Ingredients

  • salt and pepper
  • 1 can tomatoes, about 28 oz., with juice; or 4 cups cut up raw tomatoes
  • 1 teaspoon(s) dried oregano (substitute basil or marjoram if preferred)
  • 1 bay leaf
  • 4 medium potatoes, cut into 1" pieces
  • 4 medium carrots, cut into 1" pieces
  • 2 cup(s) dry red wine (substitute beef or chicken broth)
  • + 5 more ingredients
    • 2 tablespoon(s) oil or butter
    • ½ cup(s) cooked rice or bread crumbs
    • 1 egg
    • 2 onions
    • 1 pound(s) lean ground meat (beef, turkey, lamb, etc)

Pulse until smooth in food processor: 1 coarsely chopped onion, 1 egg, rice or breadcrumbs, 1 teaspoon salt, 1/2 teaspoon pepper and 1 teaspoon crumbled dry oregano.
