Mediterranean Chicken Summer Stir-Fry

Ingredients

  • ¼ cup crumbled reduced-fat feta cheese
  • ¼ cup chopped fresh parsley
  • ¼ cup sliced Kalamata olives
  • 1 pint grape tomatoes, halved
  • 2 tablespoon lemon juice
  • 1 onion, diced
  • 4 cup diced zucchini (about 2 large)

    • 2 tablespoon olive oil
    • Salt and pepper to taste
    • 3 teaspoon dried oregano leaves, divided
    • 1 ½ pound boneless, skinless chicken breasts, cut into 1-inch slices
