Ingredients

  • ¼ cup minced fresh cilantro
  • ¼ cup minced fresh culantro
  • 1 teaspoon salt
  • ¾ cup fat-free, less-sodium chicken broth
  • 1 tablespoon olive oil, divided
  • 3 garlic cloves, minced
  • 6 green plantains, peeled and cut into 1-inch pieces (about 3 pounds)

    • 6 bacon slices, cooked and crumbled (drained)
    • 1 cup chopped onion
    • 2 teaspoons salt, divided
    • 1 (15-ounce) can tomato sauce
    • 6 tablespoons olive oil, divided
    • 5 pounds skinless, boneless chicken breast, cut into bite-sized pieces

To prepare chicken, heat 1 1/2 teaspoons oil in a large Dutch oven over medium-high heat. Add half of chicken; sauté 8 minutes or until browned. Remove chicken from pan.
