Moroccan Lamb Stew

Ingredients

• 2 tablespoons unsalted butter
• 12 dried apricots
• ¼ teaspoon cinnamon
• 3 tablespoons flour
• 1 ¼ teaspoons kosher salt
• ¼ cup raisins
• ¼ teaspoon ground ginger

  • ¼ teaspoon pepper
  • 2 cups chicken broth
  • 2 ½-3 lb. lean lamb stew meat, cut in 1-inch pieces
  • 2 medium parsnips, peeled and cut in 3/4-inch pieces
  • 3 slender carrots, peeled and cut in 3/4-inch pieces
  • 1 large onion, chopped
  • ¹/₈ teaspoon cayenne

Place lamb in a bowl; toss with flour, 1/2 tsp. salt and pepper.Melt butter in a large skillet over medium-high heat. Add half of lamb and cook until browned, about 7 minutes.
