Pan Chicken with Texas Grapefruit and Mint Sauce

Ingredients

  • 4 boneless skinless chicken breast halves
  • ¼ t salt
  • ¼ t coarse black pepper
  • 3 t olive oil
  • ¼ c shallots
  • ¼ t crushed red pepper
  • 1 c chicken broth
  • + 4 more ingredients
    • ½ c fresh Texas Rio Star Grapefruit juice (1 grapefruit)
    • 1 T minced mint; 4 mint leaves for garnish
    • 2 t all-purpose flour
    • ¼ t sugar
